Pineapple Upside Down Cake


Pineapple Upside Down Cake is a Classic Southern Recipe that is a staple at most holidays or other gatherings. This easy recipe that uses a boxed cake mix is a family favorite and a cinch to make. The secret is using a pineapple cake mix and the juice from your drained pineapple to really amp up the flavor.

Here's what you will need to make the cake:

    Ingredients:
    • One Box of pineapple or yellow cake mix
    • Brown Sugar
    • Crushed Pineapple in juice
    • Maraschino cherries
    • Eggs
    • Oil
    • The reserved juice from the crushed pineapple
    Equipment:
    • Mixing bowl
    • Whisk or Mixer
    • Measuring cups
    • 9x13 baking dish, glass recommended
    • Bowl scrape or rubber spatula
    You may notice that butter isn't listed as one of the ingredients. My mother never used butter in the bottom layer because we always found that the leftover juice that clings to the pineapple is enough moisture.

    Pineapple upside down cake is perfect for any time of year. Especially when it's as delicious and simple as this one is.

    Ingredients:
    • 2 cups packed brown sugar
    • 20 ounce can crushed pineapple in juice with the juice drained and reserved
    • 12 Maraschino cherries
    • 15.25 ounce pineapple or yellow cake mix
    • 3 eggs
    • 1 cup pineapple juice
    • 1/2 cup vegetable oil
    Instructions:
    1. Preheat Oven to 350 F
    2. Spray a 9x13 pan with cooking spray
    3. Sprinkle the sugar in the pan and press to pack
    4. Place the cherries on the sugar
    5. Sprinle the pineapple over the cherries and brown sugar and set aside
    6. Mix the cake mix, egg, pineapple juice and oil accoring to the box directions
    7. Pour the cake batter over the pineapple in the pan
    8. Bake in the preheated oven for 32-35 minutes or until a fine crumb is on your tester
    9. Cool and serve
