Peanut Butterscotch No Bake Cookies are a quick and easy sweet treat.
No-bake cookies are one of my favorite treats because you can whip up a batch in just a few minutes and I always have the needed ingredients on hand.
This version of the classic uses a mix of white and brown sugar for a more butterscotch-like flavor. It was actually inspired by one of my favorite pies.

- Milk
- Butter
- Vanilla
- Peanut Butter

Prepare your cookie sheets and measure out all ingredients before starting because once the process starts it goes quickly.
Store the cookies in an airtight container
These can also be stored in the freezer which is my favorite method during the summer.

Ingredients:
- 1 cup granulated white sugar
- 1 cup packed brown sugar
- 1/4 cup butter
- 1/2 cup milk
- 1 teaspoon vanilla
- 1 cup creamy peanut butter
- 3 cups quick cooking oats
Instructions:
- Place foil or waxed paper on cookie sheets
- Place the sugars, milk, and butter in a sauce pan
- aPlace over medium heat and bring to a rolling boil (bubbles stay even when stirred)
- Boil for one minute, stirring constantly
- Remove from heat and vanilla and peanut butter
- Stir until peanut butter is melted
- Stir in the oats
- Quickly drop cookies by the tablespoon onto the prepare cookie sheets
- Let harden
- Store cookies in an air tight container
