Cake Mix Snickerdoodles


Cake Mix Snickerdoodles are easy and super tasty. By using a cake mix you save time and dishes because you don't have to measure out the dry ingredients.

If you want cookies that are easy to make but still taste amazing this recipe is exactly what you need.

A boxed cake mix forms the base for these cookies so you don't need to drag out the flour, salt, baking powder, and baking soda. There is also no need to cream the sugar and butter together.

Just stir the cake mix, melted butter, eggs, and vanilla together and roll the cookies in cinnamon sugar before baking.

How to Make Cake Mix Snickerdoodles:

Ingredients:
  • White or vanilla cake mix
  • Melted butter
  • Eggs
  • Vanilla
  • Sugar
  • Cinnamon
Equipment:
  • Mixing bowls
  • Measuring spoons
  • Mixing spoons
  • Cookie sheets
Directions:
  • In a small bowl mix the sugar and cinnamon and set aside
  • In a larger bowl mix the cake mix, melted and cooled butter, eggs, and vanilla until a dough forms
  • Using a Tablespoon form balls of dough and roll in cinnamon sugar
  • Place coated balls of dough on a sprayed or greased cookie sheet and bake
  • Cool slightly on the sheet then place on a cooling rack to completely cool
TIP: I found the cookies were easier to shape and spread less after the dough had rested for a few minutes. If you're having difficulty with the dough don't be afraid to refrigerate it for about 10 minutes to let the butter harden slightly.

Ingredients:
  • 1 15.25 ounce box white or vanilla cake mix
  • 6 Tablespoons butter, melted
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 4 Tablespoons sugar
  • 1 teaspoon cinnamon
Instructions:
  1. Preheat oven to 350 degrees F
  2. Combine the cinnamon and sugar in a small bowl and set aside
  3. In a large bowl combine the cake mix, butter, eggs, and vanilla until a soft dough forms
  4. Spray a Tablespoon with cooking spray and scoop dough and form into balls
  5. Coat the balls in the cinnamon sugar and place on sprayed cookie sheets leaving approximately 2 inches between cookies
  6. Bake for 7-9 minutes
  7. Cool slightly in pan and the remove to a cooling rack to cool completely
