Broccoli cheese soup is a favorite and if you can make it in the slow cooker it's even better.
This soup does have a slightly unusual ingredient but don't be afraid to give it a try. Instead of thickening the soup with a cornstarch slurry or a roux it uses instant mashed potato flakes.
How To Make Slow Cooker Broccoli Cheese Soup:
Ingredients:
- Frozen broccoli
- Onion
- Potatoes
- Chicken broth
- Shredded colby jack cheese
- Shredded processed cheese
- Evaporated milk or half and half
- Instant mashed potato flakes
- salt
- pepper
- garlic powder
Equipment:
- Slow Cooker
- Knife
- Cutting board
- Measuring cup
- Measuring spoons
- Ladle
Directions:
- Chop the onion add to slow cooker
- Peel and chop the potatoes
- Add the potatoes and broccoli to the slow cooker
- Season with salt, garlic powder, and pepper
- Pour the chicken broth over the potatoes and broccoli
- Cover and cook until the potatoes and broccoli are tender
- Add the milk and potatoes flakes if needed
- Add the cheese and stir until melted
- Serve and enjoy!

Ingredients:
- Medium onion, chopped
- 4 medium russet potatoes, peeled and chopped
- 2 12 ounce bags frozen broccoli, I used florets but chopped would also work
- 4-6 cups chicken broth
- 1 1/2 teaspoons garlic powder
- 1/2 teaspoon salt
- Black pepper to taste
- 12 ounces evaporated milk or half and half
- 1 cup instant mashed potato flakes
- 2 cup shredded colby Jack cheese
- 1 cup shredded processed American cheese, aka Velveeta
Instructions:
- Place the onion, potatoes, and broccoli in a 4-6 quart slow cooker insert
- Pour the chicken broth over the vegetables
- Season with the salt, garlic powder, and pepper
- Cover and cook on low for 7-8 hours or high for 5-6
- Aprroximately 15 minutes before serving add the milk and instant potato flakes
- Sprinkle the cheese in the soup, stirring in between batches until all the cheese has been added and is melted
- Serve and enjoy!
