Slow Cooker Broccoli Cheese Soup


Slow Cooker Broccoli Cheese Soup is a cool-weather favorite.

Broccoli cheese soup is a favorite and if you can make it in the slow cooker it's even better.

This soup does have a slightly unusual ingredient but don't be afraid to give it a try. Instead of thickening the soup with a cornstarch slurry or a roux it uses instant mashed potato flakes.

How To Make Slow Cooker Broccoli Cheese Soup:

Ingredients:
  • Frozen broccoli
  • Onion
  • Potatoes
  • Chicken broth
  • Shredded colby jack cheese
  • Shredded processed cheese
  • Evaporated milk or half and half
  • Instant mashed potato flakes
  • salt
  • pepper
  • garlic powder
Equipment:
  • Slow Cooker
  • Knife
  • Cutting board
  • Measuring cup
  • Measuring spoons
  • Ladle
Directions:
  • Chop the onion add to slow cooker
  • Peel and chop the potatoes
  • Add the potatoes and broccoli to the slow cooker
  • Season with salt, garlic powder, and pepper
  • Pour the chicken broth over the potatoes and broccoli
  • Cover and cook until the potatoes and broccoli are tender
  • Add the milk and potatoes flakes if needed
  • Add the cheese and stir until melted
  • Serve and enjoy!

Slow Cooker Broccoli Cheese Soup is creamy and delectable

Ingredients:
  • Medium onion, chopped
  • 4 medium russet potatoes, peeled and chopped
  • 2 12 ounce bags frozen broccoli, I used florets but chopped would also work
  • 4-6 cups chicken broth
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon salt
  • Black pepper to taste
  • 12 ounces evaporated milk or half and half
  • 1 cup instant mashed potato flakes
  • 2 cup shredded colby Jack cheese
  • 1 cup shredded processed American cheese, aka Velveeta
Instructions:
  1. Place the onion, potatoes, and broccoli in a 4-6 quart slow cooker insert
  2. Pour the chicken broth over the vegetables
  3. Season with the salt, garlic powder, and pepper
  4. Cover and cook on low for 7-8 hours or high for 5-6
  5. Aprroximately 15 minutes before serving add the milk and instant potato flakes
  6. Sprinkle the cheese in the soup, stirring in between batches until all the cheese has been added and is melted
  7. Serve and enjoy!
